Insomnia Cookies was founded in 2002–03 by Seth Berkowitz (and Jared Barnett) while students at the University of Pennsylvania, commencing delivery from a dorm room. The first retail bakery opened in 2003 in Syracuse, NY, and growth accelerated—exceeding 100 locations by 2016, 200 by 2021, and over 350 by late 2025. Originally majority-owned by Krispy Kreme (JAB) in 2018, a 2024 transaction transferred control to Verlinvest and Mistral Equity Partners. Headquartered in Philadelphia with additional offices including New York and Newtown Square, PA, the privately held company has around 1,700–1,800 employees. Notable milestones include the 2021 opening of the CookieLab concept, late-night delivery until 3 a.m., and partnerships such as “Official Cookie” for New York Knicks and airport locations. With a target of 1,800 bakeries over the next decade, the brand remains focused on growth through omni-channel retail, transit venues, and global markets.

Penn Station's origins can be traced back to Jeff Osterfeld's first venture in 1983 as owner/operator of "Jeffrey's Delicatessen" in the Dayton Mall in Dayton, Ohio. It was here that the roots of the "ownership mentality" began to form for the founder and Chief Executive Officer of Penn Station, Inc. Jeff saw first-hand the impact his presence in the store had on product quality, customer service and sales. On a trip to Philadelphia, Jeff was particularly attracted by the popularity of the cheesesteak sandwich. This trip prompted an addition to the deli's menu of a variation of the Philadelphia cheesesteak sandwich he had sampled on the south side of Philly. This sandwich became an instant hit with customers. Jeff took his innovative ideas on quick service dining to downtown Cincinnati where he opened his first Penn Station® Restaurant in 1985.
